Goa is two holidays and most itineraries only give you one. Four nights split between Calangute-side and Palolem-side gets you both: shacks, markets and the Mandovi cruise up north, then near-empty sand and Cabo de Rama in the south.
The Old Goa churches and the Fontainhas Latin quarter are worth a proper morning rather than a drive-past, and the Saturday night market at Arpora is timed into the plan when the dates allow.
A scooter is included from day two. In Goa that is not a luxury; it is the difference between seeing the place and seeing the inside of a taxi.
Every day of the trip, with the hotel, the meals and the sightseeing written out. Nothing here is hidden behind a login.
Pick-up from Dabolim or Mopa and transfer north. Check in, then the afternoon at Calangute and Baga. Evening sunset cruise on the Mandovi from Panaji jetty.
Morning at the Basilica of Bom Jesus and the Se Cathedral, then a walk through Fontainhas — the Latin quarter, all ochre and blue. Afternoon free at Anjuna or Vagator; scooters handed over today.
Check out and drive south, stopping for the Dudhsagar falls jeep safari through the sanctuary (seasonal). Continue to Palolem and check into a beachfront property.
A slow day. Morning dolphin boat from Palolem, afternoon at Cabo de Rama fort for the cliff view, and sunset at Patnem where the shacks still close early.
Breakfast, checkout and transfer to Dabolim or Mopa. Allow ninety minutes from South Goa to Dabolim, two and a half to Mopa.

Private AC vehicle for the airport transfers and the north–south leg. Day-to-day movement is by the included scooter, which is how Goa is meant to be seen. Helmets are provided and mandatory.

Every other Goa package we looked at parks you in Calangute for four nights. Two and two meant we got the markets and the cruise and then two days of Palolem where the beach was basically empty. The scooter being included from day two saved us a fortune in taxis.

The guided walk through the Latin quarter was far better than I expected — an hour and a half and we came away actually understanding the place. Dudhsagar was closed for the season when we went, which is clearly stated in the itinerary, but do check your dates.
