Goa is two holidays. Book both.
The north sells the postcard and the south delivers the beach. Splitting four nights is the best decision you will make.

Most Goa packages put you in Calangute or Candolim for four nights and call it a holiday. You get the markets, the cruise, the shacks and a beach with roughly the population density of a railway platform.
The south is a different state of mind. Palolem, Agonda and Patnem still close early, still have shacks run by the family that built them, and still have stretches of sand where you can put a towel down without negotiating.
Neither is better. The north has the food, the nightlife, the Saturday market at Arpora and the Mandovi cruise. The south has the quiet. Two nights in each gets you a complete holiday instead of half of one.
The drive between them is about two hours and passes Dudhsagar, which turns the transfer day into a day out rather than dead time. The falls are closed in the monsoon and spectacular immediately after it.
And rent a scooter. Goa is a place you see from a scooter or you do not really see at all — the chapel on the hill, the beach with no sign, the bakery in the village behind the resort. Taxis here are expensive and cartelised, and a scooter turns the whole state into somewhere you can wander.
